I had some leftover spaghetti with clams in the refrigerator. And, because I always find a way to make leftovers into something new, I decided to add my husband's favorite - shrimp. But, I wanted to put a little twist on how I cooked the shrimp, so I decided to bake them. Here's how I did it.
You will need:
2 Tabs. olive oil
1 Tabs. butter
1 Tabs. lemon juice
1 Pound shrimp (cleaned and peeled)
2 or 3 garlic cloves (chopped)
1 Tabs. Italian seasoning
1 teas. red pepper flakes
leftover cooked spaghetti
Preheat the oven to 350 degrees
To a baking dish add olive oil, and butter.
Melt the butter. Stir to incorporate.
Add in the lemon juice.
Note: You could also substitute fresh lemon slices.
Layer the shrimp on top.
Note: You want to buy at least the 16 - 20 count shrimp. Our local grocer always has the shrimp on sale for around $5 or $6 a pound, (sold in 2 pound bags, already cleaned), so I always have 2 or 3 bags in the freezer. It's such a deal for us land locked shrimp lovers.
You can also use more shrimp.
Sprinkle the chopped garlic on top.
Note: If you love garlic, add more.
Sprinkle Italian seasoning on top.
Note: Sometimes, I use 'Old Bay seasoning for a different flavor.
Sprinkle red pepper flakes on top.
Note: If you like heat, add more. If you don't like heat, add less or omit.
Bake at 350 degrees for 15 minutes.
And it is ready to serve.
You could even serve this as a main course. If you use the larger size shrimp, this makes an excellent entree'.
Let's do a little quality control test. Nice pink color, smells heavenly.
Oh Man ! That tastes wonderful. My husband could and would eat this whole pan all by himself.
I've heated up the leftover spaghetti, let's add it to the top of the spaghetti, and drizzle a little of the melted butter over the shrimp.
Note: You can use any leftover spaghetti, or pasta, with this shrimp dish.
Now to gild the Lilly - a little Parmesan cheese on top, OK a lot of cheese.
And dinner is ready.
Just add a salad and a slice of homemade Italian bread.
Grab a pound or two of shrimp, and give this easy shrimp dish a try.
