Most people are making resolutions to try to lose a few pounds when the new year rolls around, and after a week they start to crave something sweet. At our house, we try to substitute some healthy alternatives, without feeling deprived. My skinny apple pie dessert is one that allows us to enjoy an apple pie taste without all the fat and calories. It's all made on the stove top, and only takes 15 minutes. How? First, by omitting the crust, we save 300 calories and tons of fat. Second, by substituting sweetener for the sugar. Let me show you. This recipe will make 2 servings.
You will need:
1 large granny smith apple
3 tsp. artificial sweetener
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. allspice
1 tsp. cornstarch
1/4 cup water
2 or 3 gingersnap cookies
Peel, core, and chop the granny smith apple.
You can use whatever type of artificial sweetener you would like. I am using a xylitol sweetener, (it is a natural sweetener with no calories). If you use a single serve packaged sweetener you will need 2 or 3 packets.
In a small skillet, add the chopped apple, and the sweetener.
Add the cornstarch.
Add the cinnamon.
Add the nutmeg.
Add the allspice.
Stir well, and cook over medium heat. After about 2 minutes the sweetener and spices will start to melt and form a sauce.
Add the water. Continue cooking, and stirring occasionally.
The sauce will start to thicken. Cook for about 8 to 10 minutes, until the apples soften and the sauce is thick, (like an apple pie filling). It will already smell like an apple pie.
While the apple pie filling is cooking, place the cookies in a plastic bag and crush.
Note: you can also use 1/2 of a graham cracker, if you do not have ginger snap cookies. I have also used pumpkin snap cookies.
Once the apples are softened and the filling is thickened, spoon into serving dishes.
Sprinkle the crushed cookies on top.
Note: if you would like, you can also top with some non-fat or light whipped cream.
And now you have a quick, tasty skinny apple pie dessert.
This is tasty, and will satisfy your sweet tooth without all the extra calories and fat.
Note: You can also make this using different fruits. Some of my examples are:
Cherries, just add some almond or vanilla extract and omit the spices
Peach, follow recipe the same
Blueberries, 1/4 tsp. lemon juice, omit the nutmeg
Blackberries, 1/4 tsp. lemon juice omit the spices
Raspberries, omit spices.
